Together with Noma, who also finished first at the World’s 50 Best Restaurants Awards, Østerbro-based Geranium is one of two three-star Michelin restaurants in Denmark.

The change means that for the first time in 18 years, Kofoed is developing a completely new menu.

“I do not see it as a limitation, but as a challenge that allows us to dive deeper into something else,” Kofoed tells Berlingske.
